Cook your bacon and Preheat the oven to 400F. While thats going on, remove the tops of your bell peppers and scoop out the seeds and pulp from the sides of the peppers
When the bacon is done, set it aside. Scramble your eggs in a bowl with salt, pepper, garlic and onion powder, along with the melted butter, I like to use this instead of milk to keep the eggs fluffy.
Now mix in your chopped spinach and grated cheddar cheese.
Taking the bacon and loosely breaking into chunks, add 3 per bell pepper.
Carefully Pour the egg mixture evenly into each bell pepper.
