Even if youโ€™re not doing the Whole30, this is a light and nutrient rich breakfast for the family. You have enough energy to start off the day but donโ€™t have that weighed down feeling that makes it hard to get off your rear-end.

Iโ€™ve had my fair share of those mornings, no matter how many cups of coffee!

This takes about 10 minutes to prep, then sits in the oven for about a half an hour. You can make this the night before and reheat throughout the week too for a great school morning option!

  • 1 dozen Nellie's Free Range Eggs
  • 3 strips uncured bacon no sugar added
  • 1/2 cup chopped green bellpepper
  • 1/2 cup chopped red bellpepper
  • 1 cup chopped baby spinach
  • 1/4 cup chopped onion 1
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
