If you’re on the Whole30 diet, you’re going to want to try out this Whole 30 Breakfast Casserole! It’s super easy to put together, and once you have everything in your casserole dish (or skillet), its hands off for the remainder of the cook.

For this recipe I’m using Nellie’s Free Range Eggs. Nellie’s Certified Humane eggs come from family-owned, free-range farms. This means that the hens have plenty of room to peck and play outside in the fresh grass – no cages in sight.

I’m using ingredients that are all Whole30 diet compliant, from the protein-packed Nellie’s Free Range Eggs, to the Bacon that is uncured and contains no sugar.

And the best part? If you’re not feeding the family, you can cut these into portions, and store in the fridge to have as breakfast for the entire week!

Even if you’re not doing the Whole30, this is a light and nutrient rich breakfast for the family. You have enough energy to start off the day but don’t have that weighed down feeling that makes it hard to get off your rear-end.

I’ve had my fair share of those mornings, no matter how many cups of coffee!

This takes about 10 minutes to prep, then sits in the oven for about a half an hour. You can make this the night before and reheat throughout the week too for a great school morning option!

I’m going to be in up to my neck with back-to-school in a few weeks, so we need all the help we can get in the mornings with breakfast!

Ingredients

  • 1 dozen Nellie's Free Range Eggs
  • 3 strips uncured bacon no sugar added
  • 1/2 cup chopped green bellpepper
  • 1/2 cup chopped red bellpepper
  • 1 cup chopped baby spinach
  • 1/4 cup chopped onion 1
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
