Huevos Rancheros Tostadas are aa fun way to do breakfast for dinner, but if with some seasoned sweet potatoes on top makes them that much better!
It’s super hearty and delicious. Put this one on the brinner menu ASAP!
Sweet potatoes isn’t something I’d normally think of on huevoes rancheros but when doesn’t potatoes taste good with eggs?
Plus you get those complex carbs with a sweet potato, so that makes this 100% healthy.. right?!
The sweet potatoes are seasoned with a little cumin, paprikia ,salt and garlic. On top of some black refried beans avocado, cherry tomatoes and a touch of cilantro and queso fresca, all thats left is to add a fried egg to it.
I mean, huevos rancheros tostadas aren’t a new thing on the blog, but I feel this one has a freshness to it that really makes it worth changing up a go-to recipe.
Peel and chop sweet potato and place in a large bowl. Toss in olive oil, salt, cumin paprika, and garlic powder. Cook in a skillet over medium heat for about 10 minutes until tender and browned ; set aside
While the potatoes are cooking heat up a can of refried black beans in a small pan on medium low.
16 oz black refried beans
Fry 4 eggs and place on a plate.

Top black refried beans on tostada, Top with a spoonful of sweet potatoes, cherry tomatoes, avocado, queso fresca and cilantro . Top with fried egg and your favorite salsa and enjoy!
4 tostada shells, 1/4 cup queso fresca, 1/4 cup cilantro, 1= cup cherry tomatoes, 1/2 avocado
