One of my favorite weekend breakfasts to make are breakfast sliders. They’re fun to put together, and even better if you make them as a breakfast slider casserole, it comes together quick and easy and ready to serve the whole family!

And to turn things on its head for this recipe, I’m making them with Dave’s Killer Bread Sweet Potato Rock ‘N’ Rolls! They’ve got just a hint of cinnamon with none of those scary additives in the ingredients list.

Plus, that sweet and savory combo is the perfect way to wake up the family!

What I like to do to make these breakfast sliders get cooking quickly, is bake my bacon and bottom half of the breakfast slider casserole at the same time.

By the time the eggs are almost fully cooked, the bacon is about done as well. Cooking separately keeps the bottom of your baking dish free from a mini lake of bacon grease.

Then throw it all together with cheese and top it with the other half of your Dave’s Killer Bread Organic Sweet Potato Rock ‘N’ Rolls with a little butter to top it off on top.

These are one my favorite breakfast recipes that always count on never having leftovers with. When your picky son grabs for a second helping, you know you’ve got a winner!

Sweet Potato Breakfast Slider Casserole

Ingredients

  • 1 package Dave’s Killer Bread Organic Sweet Potato Rock ‘N’ Rolls
  • 6-8 large eggs
  • 8 strips bacon
  • 8 slices cheddar cheese
  • 2 tbsp butter

Instructions

  • Preheat oven to 400 degrees. place bacon strips on a cooling rack over a cookie sheet and place in the oven while preheating.
  • Take your package of Dave’s Killer Bread Organic Sweet Potato Rock ‘N’ Rolls and cut the whole set of rolls in half so that you have a bottom half and a top half. Set the top half aside, and place the bottom half in a greased 13 x 9 baking dish
  • Crack your eggs and place on top of the bottom half of the Hawaiian bread in the baking dish so that they're evenly distributed. Puncture the yolks with a fork
  • After the bacon has been in the oven for about 10 minutes, place baking sheet with the bottom half of the bread with egg on it in the oven.
  • After 10 minutes, remove the bacon and check the eggs, if the egg whites are no longer clear, you're ready to place the bacon on top.
  • Remove the baking dish and place cheese, bacon and the top half of the rolls on top. Brush on a liberal amount of melted butter on the top of the rolls. Place back in the oven for another 5-10 minutes until the rolls are golden brown and the cheese is nice and melted.
  • Remove from the oven and let it rest for about 5 minutes. Using a knife, cut along where the rolls separate making sure you cut through the bacon. Serve and enjoy!
