I had a gnarly craving for stuffed zucchini boats this week. I wanted to do something similar to a stuffed pepper style, but different at the same time. Without making things too hard in the kitchen, I wanted to make something easy, and healthy that is perfect for a weeknight meal!

When I’m trying to eat healthy, I like to reduce my carb intake. Not that carbs are good or bad (I’m in no way a nutrition), I just know what works for my body. Zucchini Boats are my favorite go to meal to make on my carb cutting weeknights and I’m trying to put something easy together.

My stuffed zucchini boats had almost a Sante Fe vibe to them. The Foster Farms Organic Ground Turkey, is brown and seasoned with chili powder, cumin, smoked paprika, then I add a can of salsa mexicana (it’s basically a canned salsa), and some black beans.

Loading it up the ground turkey filling into the zucchini boats then topping it of with cheese, makes such a flavorful meal, and there’s no guilt whatsoever. I ate three of these and didn’t feel one once of remorse!

This meal really does not take much time, by the time the stove is preheated you can have the filling ready to load up in your zucchini boats.

If you’re really on a crunch for time, you can prep your zucchini ahead of time, and have everything just ready to load up and throw into the oven!

Stuffed Zucchini Boats with Ground Turkey

Ingredients

  • 1 lb Foster Farms Organic Ground Turkey
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/3 tsp salt
  • 1/4 tsp ground black pepper
  • 8 oz canned mexican salsa
  • 8 oz black beans
  • 3 medium zucchinis
  • 1 cup grated cheese

Instructions

  • Preheat oven to 400°F. In a pan on medium heat, brown ground turkey in 2 tbsp of olive oil. Stir in chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, Mexican salsa and black beans. simmer for about 7-10 minutes.
  • Cut zucchini in half length wise, scoop our seeds with a spoon. Fill with ground turkey filling, top with cheese and place on a sheet pan. Place in oven and cook for about 7-10 minutes. Enjoy!
