Pot Roast is one of my all time favorite comfort foods. It’s simple, fills your up, and hits the spot on a cold night. Even though spring is here I thought I’d share this recipe just before we put our sweaters away!

The weather has been odd this year in California. And by odd, I mean it’s actually been raining and cold for once in the winter. We’ve had record breaking rainfall, and an actual long stretch of cold weather. We’ve been even getting patches of rain in March! What’s going on?!

I know all you east coasters are laughing. 50 degree weather in the middle of winter is something to be happy about when you’re out in the east coast salting your curbs and scraping ice off your car every morning!

So when its time to warm up. This is something I like to make in the morning and let simmer all day. A nice cut of chuck roast, simmering in beef broth, red wine, fresh thyme, rosemary, onions, potatoes and carrots.

My absolute favorite though, is cooking down the juice from the pot to turn it into a gravy for the pot roast!

When I brown my chuck roast I like to take a little mustard and rub it onto one side of the chuck, with sat and pepper, then take slices of garlic and press it into the meat to get some flavor infused into the chuck while it browns.

After getting the veggies and herbs in the pot along with red wine and beef broth, it’s hands off for the next 6 hours! I enjoy cooking this in a dutch oven, so that I can cook everything in one pot since I’m browning the meat. The hours though, are the same if you’re going with a crock pot. So its up to you!

Ingredients

  • 2 lbs chuck roast
  • 6 medium red potatoes
  • 4 medium carrots
  • 2 cloves garlic
  • 1 medium yellow onion
  • 1 tbsp salt
  • 1 tbsp mustard
  • 1/2 tbsp black pepper
  • 4 sprigs fresh thyme
  • 1 sprig rosemary
  • 1 whole bay leaf
  • 32 oz beef broth
  • 1 cup red wine

Instructions

  • Cover your chuck in salt and pepper, then rub mustard on one side. with sliced garlic pressed in throughout the chuck roast.
  • Chop carrots in about 1-2 inch chunks, cut the potatoes and onions into fourths.
  • In your dutch oven, heat about 2 tbsp olive oil, and brown the onions. Remove the onions after 2 minutes, then begin to sear the chuck; 2 minutes each side.
  • Remove the chuck, and pour in the red wine and beef broth, scraping up any of that good stuff browning the chuck roast left behind.
  • Add the chuck back in along with the carrots, potatoes, thyme and rosemary. Let this simmer on low for about 6 hours.
  • When the roast is ready, take about 2 cups of the juice left over, and mix in 2 tbsp of cornstarch slurry to thicken it up. Pour over the pot roast and enjoy!

    I’m assuming dry mustard? I will try this for sure. I currently cook pot roast in my instantpot – 99 minutes standard mode, quick release, add carrots and potatoes and pressure cook for an additional 8 minutes – that’s with small potatoes (about the size of a small egg).

    My great-grandma used to do pot roast every Sunday. The entire family (20+ people) would get together for a dinner of “Stringy meat”, mashed potatoes and gravy, carrots, homemade rolls, and then pie and ice cream for dessert. Every Sunday. It was my favorite day of the week. Unfortunately this stopped when my great-grandma died but I am hoping to start this tradition back up when my wife and I get a bigger house with a real dining room that can fit more than 3 people.

    • You should definitely start that tradition back up! I’m on a mission to start a Sunday family dinner series on the blog specifically for that reason. But I need a bigger place first! lol

  3. Pot roast is a family favorite around my house. My standard version is oven baked and I caramelize my onions with a bit of balsamic and worcestershire. This sounds sooo good though. Makes me want to make some this weekend.
