To be totally honest, my initial plan was to make this a boozy daquiri with some good quailty rum.
But, right now, I’m the only person in the house that can drink alcohol, with the pregnant wife, in a dire need for a cocktail, I had to treat the family to a fun summer mocktail that would hit the spot for everyone!
I used ginger beer that gave the mocktail a fresh flavor and a little zing, that gives the feeling that its spiked. Feel free to booze this up with a little rum, too. I know I did!

Grilled Watermelon Daiquiri Mocktail
- 3 cups watermelon
- 3 cups ice
- 1/4 cup ginger beer
- slice your watermelon into 2 inch steaks. Grill for about 5 minutes, until you get nice char marks on each side.
- Chop watermelon. Add to a blender with ice and ginger beer. Blend for about 30 seconds until evenly blended.
- If too liquidy, add more ice. If too thick, add more ginger beer. Enjoy!
