I love apricot cobblers during the summer. What I don’t like? Heating up the kitchen to make said apricot cobbler. This weekend I experimented with grilling apricots, then cooking the cobbler in the grill. It came out amazing!
I ran to my local Ralph’s grocery, and picked up some fresh local sourced apricots. Going with local guarantees I have the freshest fruit possible, to make an amazing cobbler. But I wanted to put a little twist on them. What if I soaked them in whiskey for an hour, then grilled them for the cobbler?
After I grilled them, I threw them in a skillet on the grill with the sugar, and just a tad more whiskey to let it cook down before pouring them over the batter sitting on the side burner in melted butter just ready to go. See? All outside! I ain’t about that “getting the kitchen hot” life right now!
The whiskey flavor adds a little extra “grown up” flavor to the cobbler, that really makes this something special. This is really the perfect summer treat for entertaining when the kids are off to summer camp. Or are just so picky that they wont even eat a fruit cobbler because it “looks weird” (quote from my son…).
Apricots make an amazing cobbler by the way. Especially when they’re grilled. You get this nice tartness, along with a little smokey and sweet from it being cooked down. If you haven’t done an apricot cobbler, regardless of grilled or swimming in whiskey, you’re really missing out!
Also, feel free to mix up the alcohol too. Try bourbon, or even honey or cinnamon whiskey to get different flavors. Also, if you’re making drunken apricots. You’re going to want to stick around and see what I did with the whiskey left from soaking the apricots!
Grilled Drunken Apricot Cobbler
For the drunken apricots
- 2 lbs apricots
- 1 cup whiskey you may need more depending on the bag
- 1/2 cup sugar
- 1 tsp ground cinnamon
For the batter
- 1/2 cup butter
- 1 cup white flour
- 1 cup sugar
- 1 tbsp baking powder
- 1/8 tsp salt
- 1 cup milk
- Cut apricots in half. place in a zip lock bag with whiskey and let sit in the fridge for at least 30 minutes, up to 24 hours.
- Mix together white flour, sugar, baking powder, salt and milk in a bowl. set aside
- Preheat your grill to 350F. place apricots on grill face down and for about 5 minutes until they get nice char marks. Set them in a skillet with 1/2 cup sugar, cinnamon, and about 1 oz of whiskey (optional)
- in a large skillet (about 18 inches) melt 1/2 cup of butter, then pour in your batter. Take the apricots from the other skillet and pour into the skillet that has the butter and batter. Do not stir.
- Close the grill and let cook for about 30-40 minutes until the batter is nice and golden brown on top. Let cool for about 5-10 minutes, then serve up with a nice cold scoop of vanilla ice cream. Enjoy!
