Tuscan Salmon is a fairly easy recipe to put together – The ingredients are simple too:

  • Salmon
  • Heavy Cream
  • Garlic
  • Parmesan
  • Sun Dried Tomatoes
  • Chicken Broth

Salt and pepper to taste of course..

What I love the most about Tuscan “enter-in your-protein-here” is exactly that. You literally could use any protein in this dish and it’s sooo good. Not a fish fan? Substitute with chicken? Rather do pork cutlets or beef? Sure! Why not?!

But on occasion I love making Tuscan Salmon. It’s got plenty of nutrients – especially omega 3 fatty acids. And the sooner you can get the younger family members acclimated to other tastes than chicken and white fish, the sooner they’ll start enjoying other foods! 

Seriously, my picky eater loves salmon – it has to be drenched in lemon juice – but he loves it. I’ll take it! 

So, the most intimidating thing for newer cooks is pan searing fish. It can stick – flake apart and look like a massive disaster. 

Cooking Fish

Here’s a few pointers for you:

When cooking fish, the trick is, to let it tell you when it’s ready to flip. When it’s ready it will release itself from the pan. 

When in doubt, use a good non-stick pan. Calphalon Classic Hard-Anodized Nonstick Pans are a great choice too. They’re affordable and durable. And with its stainless-steel handle, you can place it in the oven up to 450 degrees as well! 

Be sure to pat your salmon dry. The moisture on the salmon will create a steam barrier and will prevent you from getting a nice crispy, browned outer sear

This is primarily a heavy cream sauce, but if you want to jazz it up a little, I highly recommend some dry white wine as well. This can go in as a deglaze when browning your garlic and onions. After that its just adding in your spinach, sun-dried tomatoes then the rest of the liquid. 

Add your salmon back in and then reduce it on low, cover and let the ingredients get to know each other for a bit.

Tuscan salmon is a saucy dish. It’s meant to be accompanied by some carbs. You can go with a quick and easy Italian bread, or pour over some rice or pasta. Either way you cannot skimp out on these!

And don’t feel like you need to get fancy. You’ve spent all this time on the main. Don’t feel bad if you bust out a box of chicken flavored rice.

Creamy Garlic Tuscan Salmon

Ingredients

  • 4 4 oz portions of salmon
  • 2 tbsp olive oil
  • 2 tbsp butter
  • ½ yellow onion chopped
  • 3-4 garlic cloves minced
  • 1/3 cup white wine optional
  • 1 cup heavy cream
  • 1/3 cup chicken broth double if omitting white wine
  • 1 cup baby spinach
  • ½ cup sun-dried tomatoes
  • Salt and pepper to taste
  • ½ cup fresh parmesan optional

Instructions

  • Add olive oil to a pan on high heat. Place salmon flesh side down and let it sear for about 2-3 minute. Flip and let cook for another 2 minutes. Remove from the pan and set aside
  • Reduce heat to medium and add in onions and garlic with butter. Cook until aromatic, then add spinach and sun-dried tomatoes; cook until spinach is tender.
  • Add in white wine and cook for 1-2 minutes. Add in heavy cream and chicken broth. Stir together and let simmer on low for about 10 minutes.
  • Stir in parmesan, then add salmon back in. Cover and let simmer for about 5 minutes or until cream is thickened to your desired thickness.
  • Serve over rice or pasta or dip some crunchy Italian bread and enjoy!
