Chorizo Turkey And Egg Breakfast Tostadas

Moving up the list on my arsenal of breakfast dishes is a Breakfast Tostada. It’s an easy and fun way to get breakfast going for the family.
Beans, Jennie-O Chorizo Seasonings Turkey Sausage, Egg Cheese and some hot sauce on a tostada shell, and I’m there!
So Brayden recently told me that his new favorite way to eat a tostada is with meat on top of beans with cheese. He’s graduating from beans and cheese, to beans cheese AND meat!
=Using Jennie-O’s Chorizo Seasoning Turkey Sausage, I got some inspiration from his latest craving and put my twist on it for this breakfast tostada. And It comes together fairly quick.
While I’m all about saving some time, sometimes its best to step things out a bit.
I fried my tostada shells, scrambled eggs and cooked up the Jennie-O Chorizo Seasonings Turkey Sausage all at one time. Maybe next time I’lll buy pre-made tostada shells, or do the shells first then do the eggs and turkey sausage to make things even easier!
Sometimes I like to bite off more than I can chew. Ok, more like.. most of the time!
This Breakfast Tostada packs quite the punch. The Chorizo Seasoned Turkey has just the right amount of heat.
Not enough to make you grab for a glass of milk, but enough to let you know its there. Definitely my kind of breakfast tostada!
Chorizo Turkey And Egg Breakfast Tostadas
Ingredients
- 1 tbsp extra virgin olive oil
- 16 oz Jennie-O Chorizo Seasonings Turkey Sausage
- 1/2 tbsp butter
- 6 medium eggs
- 6 ct tostada shells or fry up 6 corn tortillas
- 4 oz shredded cheese
- 1 can refried beans
- 1 tbsp cilanto chopped
Instructions
- In a medium sized pan, heat up olive oil over medium heat. Add Jennie-O Chorizo Seasonings Turkey Sausage stirring frequently to break down into small chunks. Cook for about 5-7 minutes until fully cooked. While the Turkey is cooking heat up refried beans in a pot and set to low to keep warm.
- For the Eggs, mix eggs in a small bowl, seasoned with a little salt and pepper to taste. Pour mixture into a medium pan with butter over medium heat. Scramble eggs until fully coagulated.
- For the tostada, add beans, Chorizo Seasonings Turkey Sausage, eggs. Garnish with shredded cheese, cilantro, and a little hot sauce. Enjoy!
