This Chicken Gnocchi Soup follows a recipe simliar to chicken noodle, but why not add some gnocci to it instead of noodles? It’s amazing the first night – but even better the second night!

Chicken Gnocchi soup is an amazing winter soup to make together. this is an absolute must to make during the cold weather months!

This goes without saying but gnocchi is easily my favorite “pasta” I use the term pasta loosely since its mostly potato but hey – close enough.

I love eating it with sauce, or turning it to a mac and cheese, and tossed in a soup is really something worth trying.

I started with a recipe that I used for my chicken and dumplings– if you like it creamy, add flour in the beginning to max a roux and it will thicken up as it cools.

I also put my gnocchi in during the end, and havent ventured into adding it in and letting it cook with the soup for the full cook.

I’m really sure how that’d turn out, maybe I’ll try it as an experiment and update this post though!

Think of this chicken gnocchi soup as the lazy mans chicken and dumplings.

And its made in a dutch oven so you can place the soup in the oven at a low temp and just let it sit all day and really just melt together if you want!

But oh my goodness is it just as good!

Equipment

  • Dutch oven

Ingredients

  • 2 stalks celery chopped
  • 2 carrots chopped
  • 1/2 yellow onion chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh thyme
  • 1 tbsp fresh parsley chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 lb chicken breast
  • 24 oz chicken broth
  • 24 oz chicken bone broth
  • 8-16 oz water optional to add more "juice" as needed. can use broth instead
  • 16 oz gnocchi
  • 1 tbsp salt
  • 1 tsp cracked black pepper

Instructions

  • Preheat oven to 325F. In a large dutch oven over medium heat, melt butter and vigorously stir in flour. Add in celery and carrots, onion garlic and stir frequently for about 4 minutes total.
  • Pour and stir in broth until broth is fully mixed into the mixture and you don't see any bits of flour. Add in chicken, thyme, parsley salt and pepper. If more liquid is desired add water.
  • Bring to a boil, cover then place in the oven for 45 minutes up to 2 hours if desired. The longer the cook the more flavorful and tender the chicken will become.
  • Remove from the oven, and add gnocchi. Cover and let rest for 15 minutes. Serve and enjoy!
