Fresh blueberries, banana, and coconut milk. These three simple ingredients come together to make a light and delious afternoon treat with these Banana Blueberry Coconut Cream Popsicles.

Popsicles are so fun and easy to make on your own. They really take no time at all and you have full control of the ingredients going into your popsicles! For this recipe, I’m using Pacific Foods Organic Coconut Original. It’s a great way to add a little creaminess into a dish your trying to make dairy free.

to Get the beautiful purple color, cook down blueberries, banana and half of the cocout beverage and let it simmer until the color begins to turn into that beautiful purple color.

Now you have two options here, Stir in the rest of the Pacific Foods Coconut beverage, or as you’re pouring into the popsicle molds, mix it so that you have a nice swirl color going on. I prefer the later. For science.

These blueberry coconut popsicles make a great after school snack too. There’s no added sugar. Just sweetness from the fruit and the Pacific Foods Coconut Beverage, which is sweetened by coconut water. So, there’s no guilt on my end handing one of these to my little guy after school or when he’s done playing outside!

Banana Blueberry Coconut Cream Popsicles

Ingredients

  • 4 cups Pacific Foods Organic Coconut Beverage 2 cups reserved
  • 4 oz fresh blueberries 1 ounce reserved
  • 1 whole banana mashed

Instructions

  • In a sauce pan, bring 2 cups Pacific Foods Organic Coconut Beverage, 3oz blueberries, and a mashed banana to a boil. Reduce to a simmer until blueberries begin to soften, stiring with a wooden spoon frequently to break down the blueberries. Do this until the mixture is a deep purple. Set aside
  • In a popsicle mold, fill half way with the simmered banana blueberry coconut blend. Fill remaining half with fresh blueberries, and CPacific Foods Organic Coconut Beverage. Let freeze over night. Enjoy!
