A healthy breakfast doesn’t get easier than Acai smoothie bowl. Today I’m sharing one that has a little punch to it with using fresh apples and peanut butter blended into the Acai. Then, topping it off with my favorite fruit and some chia seeds to get you started on your day right!

Acai smoothie bowls are great for getting the family out the door quickly. You can everything all at once, then let everyone top them with their favorite fruits and toppings.

For Acai smoothie, I blended an apple, a table spoon of peanut butter, and a little apple juice along with my frozen acai packs to get the base going.

I’ve also realized that I’m kind of a addict when it comes to chia seeds. I love the way these little things pop in your mouth. They’re great for chia pudding too! Adding them on top of an Acai bowl also makes for a nice texture and crunch.

It’s funny because my son is going through that “I don’t like food touching phase” So an Acai smoothie bowl is not his cup of tea in the least bit. But if I put the fruit on a plate with little bit of the Acai smoothie in a bowl for him to eat separately? No problem. Kids…

If chia seeds aren’t your jam, I also like to use granola, dried coconut chips, or even cereal. Something to give it a crunch and liven things up is a must!

Ingredients

  • 1 whole apple it may need to be sliced depending on your blender
  • 1 tbsp peanut butter
  • 1/4 cup apple juice
  • 4 packets frozen acai
  • 4 whole fresh strawberries
  • 1/2 cup blueberries
  • 1 whole kiwi
  • 1/8 cup chia seeds

Instructions

  • in a blender, add acai, apple, apple juice, and peanut butter. Blend until smooth; about 30-60 seconds
  • pour evenly into two bowls. Top with sliced strawberries, kiwi, blueberry, and chia seeds. Enjoy!
