Cook bacon and set aside, leave about 1 tbsp of bacon dripping in the pan. preheat oven to 425. Chop bacon into small pieces.
Crack eggs into a bowl with salt and whisk until completely yellow. Add into pan with bacon drippings over medium heat. Stir occasionally until full coagulated and then take off heat.
Place toast on a cooling rack and cover with slices of cheese. Place in oven until cheese is fully melted.
Top toast with egg, bacon pieces, avocado and cracked pepper. Red pepper flakes would be a nice touch if you like a little heat. Enjoy!
