1/4cupapricot nectarcan be substituted with a fruit juice
FOR THE APRICOT GLAZE:
In a medium saucepan, bring apricot preserves, nectar, mustard and salt to a simmer. Still occasionally to let it evenly combine. Simmer for about 5 minutes until thickened. Place in a small bowl and set aside.
FOR THE SLIDERS:
Preheat grill to 450F with a two-zone grill. Cut sausages lengthwise and cook over indirect heat.
Baste sausages with apricot mustard glaze every minute or so. Cook for about 5 minutes flipping 2 ½ minutes through.
Place sliced peppers and onions in a skillet with a little olive oil over direct heat and let them sauté for about 5 minutes. Let rest over indirect heat.
Finish the sausages by placing over direct heat to give them a char and baste a final time. Cut in half and place on sliders with additional apricot mustard glaze, and top with peppers and onions. Enjoy!
