Preheat smoker or grill to 220F with apple wood. Liberally coat chicken with BBQ rub. Smoke until internal temperature is 165 F; about 3 hours. Remove and let rest for 15 minutes.
Chop chicken in to 1/4 inch pieces. Serve on tortilla with cilantro, onion, radish and salsa. Or use your own favorite toppings. Enjoy!
