Instructions
Cucumber Mango Salsa
Cut Your Mango in half, then slice vertically, then horizontally making cubes.
Push the center of the mango from the skin side towards you so it makes all the cubs "pop" out, then with a spoon scoop out the mango and place in a bowl.
Dice your tomato, cucumber, cilantro, jalapeno, and onion.
Add all of it into the same bowl with the mango, squeeze the lime juice, and add salt.
Mix it all together and you have a lovely cucumber mango salsa! Place in the fridge until you're read to use!
Roasted Jalapeno Ketchup
For the Jalapeno Ketchup, roast the jalapeno on a gas stove, or on a grill if a gas stove top isn't available. Should take about 1-2 minutes on each side. You want a nice char like shown.
Split the jalapeno, so it will blend easier. If you want to have a less spicy ketchup, take the seeds out.
blend the jalapeno for a few seconds just to get it going.
Add in ketchup
blend for about 1 minute so that the jalapeno is fully blended into the ketchup. Pour the contents into a bottle and in the fridge until ready to serve.
Sriracha Hummus
For the hummus rinse and strain garbanzo beans and place into a blender with cumin, garlic, a squeeze of lemon juice, olive oil, and sriracha. Blend for about 2 minutes.
Taste it. Want more sriracha? Add more sriracha and stir in!
Place that wonderful hummus back into the fridge until you're ready to serve!
The Sliders
For the sliders, you can either thaw out the packages of veggie burgers in the fridge over night, or warm up in the microwave for about 40 seconds. Leave in the bag and mash them up with your hands. Preheat your grill.
Take the contents out and pack into slider sized patties. Keep your hands wet to keep the patties sticky enough to maintain a patty shape! You should get about 3 slider patties per pack of 2 veggie burgers.
Place your patties on the grill and leave them alone for about 2 minutes. flip and add cheese to the California burger patties. Toast your buns if you wish, and when the cheese is melted take everything off the grill and let rest.
While the burgers are resting. you can chop up your additional toppings for the burgers. California Burger gets tomato, avocado and pickles(optional). Mediterranean will get cucumber and red onion.
California Burger gets the jalapeno ketchup on the bun, then add tomato and avocado. Add the Sriracha Hummus to the bun for the Mediterranean Burger and top with cucumber and red onion. The Spicy Black bean burger just gets the mango salsa.
