Preheat panini press to medium high heat. In a small bowl stir together ketchup, mayo, and relish; slather a heaping amount on the bottom slice of rye bread.
Top bread with a healthy dose of pastrami, swiss cheese and a light layer of sauerkraut. Top with chips and the second slice of rye bread.
Press in panini until cheese is melted; about 3 minutes. Serve along side more chips and enjoy!
