Instructions
FOR THE PIE DOUGH
In a bowl, combine flour, salt and sugar. Cut in cubed butter and break down with your hands until in pea sized bits. Slowly mix in ice water until the dough is formed
Wrap in plastic wrap, and store in the refrigerator for at least 8 hours
FOR THE APPLE FILLING:
Core, peel and cube apples and place them in a Sautee pan, Mix in cane and brown sugar and let it sit for 10 minutes.
Place pan over medium heat and add lemon juice, cinnamon and nutmeg. Cook for 15 minutes stirring occasionally.
Add corn starch slurry, and turn off heat, stir until thickened and allow to cool for 30 minutes.
BAKING THE APPLE HAND PIES:
Roll out pie dough to a 1/8" thick sheet. Use a small bowl to cut out circles into the dough, re-roll the dough and repeat the process until all the dough is used. You should get 4-6 pies depending on the thickness of the dough.
Spoon in about 1/3 cup of the filling, using your forefinger and thumb to help keep the filling locked into the dough while closing the pie in half.
Use a fork to crimp the edges, and place on a parchment paper line baking sheet.
Brush with an egg wash, top with more can sugar and cut 3 slits into the top of each pie; Bake at 400°F for 20-25 minutes or until golden brown.
