Ingredients
FOR THE CHOW MEIN SAUCE

CHOW MEIN INGREDIENTS

peanut or avocado oil
plus more for wok seasoning

fresh chow mein noodles

Instructions
Combine Shaoxing, oyster sauce, dark soy sauce, white pepper, sesame oil in a bowl. whisk in corn starch until complete dissolved and set aside.
Over high heat add oil into your wok and swirl around until it smokes. Pour out the oil and bring the wok back over the heat.
Add 2-3 tbsp of oil to your wok and cook garlic until aromatic.
Add the cabbage, carrots celery and scallions, stir fry for about 2-3 minutes and place into a bowl and set aside.
Cook chicken in the wok with a tbsp of chow mein sauce and stir fry until thoroughly cooked.
Add vegetables back into the work and stir together; about 30 seconds
Add in chow mein noodles and remaining sauce and stir fry for about 4 minutes
Finish with bean sprouts and stir fry for another minutes and remove from heat. Garnich with thinly sliced scallions and serve
