Preheat your oven to 425F. Peel and chop your carrots in 3 inch length, then in quarters length-wise, so they resemble a french fry and throw them in a bowl.
Mince Garlic; Toss in the bowl with the garlic, salt pepper, and olive oil.
Place on a non-stick baking sheet making sure they're evenly separated, scoop out any leftover garlic from the bowl on to the carrots. Bake for 10 minutes, flip, then bake for another 10 minutes.
