In a 10-12" skillet, Cook your chorizo for about 5 minutes on medium heat on your grill. While it's cooking, scramble your eggs, then mix in cheese, El Yucateco Red Habanero Hot Sauce, salt and pepper in a medium bowl.
Add butter, then pour in the egg mixture. Turn the heat up as high as possible (about 500 degrees). Let the egg set, then cover. Cook for about 5-8 minutes until fluffy. Top with cilantro or green onion, and enjoy!
